the lactic acid bacteria that is healthy and essential to cheesemaking, will outcompete and consume the pathogenic bacteria that may have been present in the milk

Probably cus raw cheese isn’t consumed as heavily as milk so the chances of someone getting sick (company gets in legal trouble) are much lower with raw cheese
