Its for a few reasons.

Its for the same reason Asian women are attracted to European men. They both see each other as (for a lack of a better term) "exotic".

They both tend to be more Sexually Dimorphic than the opposite gender of the same race. That is to say that European men tend to be more dimorphic than Asian men (Taller, wider frame, etc) and Asian women tend to be more dimorphic than European women (Shorter, smaller frame, etc).

While maintaining that sense of "exoticness" they share closer cultural sensibilities when compared to other groups, making them more compatible.

In most large western cities Asians tend to be the second largest ethic group behind Europeans so by nature of demograhics the most common none European group European men will date will be Asians.

Of course there are many European men that have been brain-rotted by Anime into having an Asian fetish but they are the minority.
