Because you know you will be rejected by them, so your mind tries to convince you that you aren't attracted to them, while with less attractive girls, you might have a chance so you get excited by this scenario and they appear more desirable to you...I mean let's face it, if these Stacies would come to you wanting sex, there's no way you would actually reject them.
Same thing happens to uglier or fat girls, they know they have no chance with Chads, so they would tend to act rather hostile or cold to them in random interactions, they're like rejecting them first, rather than suffer the embarrassment of being rejected by them.

Theres something called taste. Just like you grow out of pop slop music (hopefully) you can also develop taste is looks that goes beyond a gigastacy.
