The only thing the CEX would have access to is the address that you sent the XMR to. They don't know what happens to it beyond that since recipients, senders and amounts are masked on blockchain and you need a key to view the details.
Like I said, buy any crypto, swap it on a non-KYC site, then done.
Just make sure to run a local node.
