Why don't people eat organ meats?

Been eating liver and bone marrow recently and seen amazing results. Why do people not eat organ meats, if this is what primitive chads eat regularly?

I eat these when I am in Asia.

Was in Hong Kong last week and had some great tripe and bone marrow.

White people used to eat these but they stopped when they became rich and could afford to discard everything except the good meat.

Poor people still ate the off cuts and offal though, that carried on till the 80s, in Northern England it was common for poor people to eat kidney, liver, blood sausage, suet, etc.

After that cheap processed neat satisfied the poor, and the rich can just eat the price stuff.

Btw in LATAM and Pakistan/ Afghanistan we still eat offal, brain, liver, kidney for sure, not sure if tripe or lung is eaten
