Evolution is driven only based on one thing which is reproduction. If a trait allows you to have more offspring and you get to reproduce it that drives evolution.
In this case Asians who reproduced from the same gene pool, in an environment where monolids allowed them to thrive more have gotten to evolve into today's Asiatic races.
As opposed to Europeans who did not go through this pattern, either they didn't need monolids, something else replaced it or they didn't get to reproduce enough.

My question is when Asians evolved monolids was it more attractive to the men and women?

Nowadays In Asia One of the most common surgeries is to turn the monolid into a doublelid

It may have just been an incidental matter of europeans getting high nasions and protruding supras instead. There is probably also some migration factor to this as well. I would imagine pre indo-european hunter gatherers also had a higher prevalence of monolids than modern europeans.

@ElTruecel could you explain this? I know you're knowledgable about indo european migration and etc so maybe you can provide a more insightful explanation.

All the indigenous people of the Americas are also a mixture of Eurasian people and East Asian. I read the native American haplogroup originated in the Altai Mountain range. The people in the Americas still have an Asian look to them despite them living there for thousands of years. Native Americans still look different from Chinese people for example but you can still tell from native Americans robust jawlines that they are Asian.
