Because that's how sex is there in real life too...Men are turned on by women acting girlish, cutesy, innocent, etc. When they have sex with them, they act surprised, overwhelmed, they put resistance, start to moan like it hurts them - it feels like borderline rape and is considered very arousing.
Even the act of courting since ancient times was supposed to be kinda predatory - guys would shower with attention the girls, who would keep rejecting them, they would grab them, take them to a private place, keep praising them while touching, groping and kissing them, the girls would resist, keep saying no, until they were taken by force.
A girl who kept rejecting you, meant that she actually wanted you. One who wasn't actually interested in you, would simply stay inert, unresponsive and offer no active resistance.

It's about the innocence factor. In Japan, they want female pornstars to appear innocent because the Japanese porn users find it hot. When a woman is acting like she does not want to be fucked, it makes her seem more innocent.

Didn't watch that many from China. There's a Chinese one that I like of two females in classical China, which is great.
