Why is tobacco brown

It could have Been white or black but the food of the gods is brown( same w psilocybin). Why?

It's the oxidation of polyphenol that causes coloration within tobacco and other plants. When the leaves are dried from the curing process they begin to degrade along with chlorophyll producing tannins which gives them the brown coloration.
