Not only are the slices smaller and more expensive, but the toppings have gone downhill, too. The sauce isn't as rich or flavorful, and the mozzarella is bland, almost like they're using low-fat cheese.
But I just noticed something else.
I was recently watching an employee make a pie at a pizzeria I've been eating at since I was a kid. I noticed he used one ladle of sauce. I vividly remember them using two ladles back in the day.
And the cheese? They used to pile on so much mozzarella that you couldn't even see the sauce underneath. Now they sprinkle it on so sparsely that the sauce is still visible.
No wonder the pizza comes out dry. You're eating more bread than toppings. When I was a kid, going there with my mother years ago every slice was loaded with sauce and mozzarella. It would literally drip onto your plate. One slice felt like a meal. And every bite was rich and delicious. You walked out satisfied. Now, you feel like you ate some cardboard smeared with low-quality toppings.
The cynical assholes running these places now (the sons of the original owners) have no pride or integrity. It's just about squeezing every last dollar out of a pie. They fucking ruined the once-great institutions in my neighborhood. Going to a pizzeria used to be a treat I looked forward to. Now, I think I might prefer pizza from a chain, like Poppa John's or Domino's. That was unthinkable years ago.
The pizza reflects the people making it. And when the people stop giving a shit because they're jerk offs, you can taste it.
