Why white people are not called people of colour

Eye colour. Green ,blue ,grey , purple.
Skin colour, red ,pink ,Pale

"People of colour" is largely an absurd Americanism that means nothing. Same with the concept of "white people". If we restrict the term "white" to "Europe" then "Europe" is a malleable concept. What constitutes "Europe"? Does Azerbaijan constitute "Europe"? If not, why not? Many scholars consider ALL of Azerbaijan to be in Europe. Some consider NONE of it to be in Europe. Sporting organisations with a "European" focus include all of Turkey in "Europe" and not just the ones from Turkish Thrace (that would make no logistic sense to allow some from Thrace and most of Istanbul and then not allow others from the minority of Istanbul and beyond).

Then we have the fact that there is "pale skin" in much of West Asia and "intermediate skin" in much of Southern "Europe". The pale skin present in West Asia are due to the same genes that are ubiquitous in conventional definitions of "Europe" and the intermediate skin between Lebanon and Greece are shared and not convergent.

So we run into issues from the outset. These terms are biologically meaningless.
