I want to know why I look good when i turn my jaw to the side but the side profile isn't good.

i can already tell you it's because you don't have a 90 degree gonial angle.
Your ramus should point straight down. It comes from constant chewing.
I fixed my angle with mastic gum, IGF-1 injections and bone smashing. Time it took was two years.
Your jaw may not be able to handle excessive chewing due to TMJ, I haven't experienced it but i've heard of others having it.

isn't 105 ideal?

yea slight variation is fine. My mandible was narrow at first then filled in with bone creating a more solidified profile. It was always around 105 or 110 but with a vertical ramus.
