Trying to answer the question of seed oils.

Conclusion:
Seed oils are only bad when they heated past their smoke point. This is because lipid peroxides release and can deactivate enzymes, inhibit protein absorption and even destroy PUFAS. Our body does have antioxidants to fight against them but if we consume too many lipid peroxides, damage can be done

When they're fresh and raw it's completely fine, that's why it smells and tastes so good
