I’m 179 cm, almost 180 cm, and I have anterior pelvic tilt and uneven shoulders. If I work on correcting these issues, will it improve my posture and overall appearance? Could it also make me look slightly taller by helping me stand more upright?

Yes fixing it can help reducing compression and add 1-2 cm, but there are also a lot of other health reason to fix that

No. Posture exercises can help, but if you’ve got an anterior pelvic tilt, the surrounding issues usually need to be addressed too (strength, mobility, movement habits, etc) It’s more about fixing the underlying factors than just forcing better posture.
