The whole concept of diverse eating was invented to sell people the idea they needed vitamin supplements on the grounds that they weren't getting enough vitamins from regular food sources. In reality your body isn't going to give a shit that you aren't getting some ideal ratio of whatever vitamins every single day (or week). You could eat a diet consisting of mostly simplistic foods and as long as you got at least some veggies 1-2 times a week you would probably be fine.
