Is not harder to digest.
It's just dirty, like eating fruits without washing them.
You haven't killed the germs first.
You can even know if a meat is rotten or bad with just the taste, you don't need science.
I cook my meat slighty, never overcook.
Also the feel is different and I preffer the feel when the meat is cooked.
Old humans cooked meat when the meat was cold (obvious) they didn't know about genes or other stuff
