I had a little experience in this, as I helped my family slaughter livestock.
1) Tie the animal's legs tightly so that it cannot run away.
2) Place stones so that it cannot roll over.
3) Cover the animal's mouth so that it cannot make any sounds.
4) Cut open the belly and wait.
5) To check if the animal is dead, touch its eyes—if it blinks, it is still alive; if not, you can cut up the meat.
6) I don't know, I haven't cut one up myself—you can watch all kinds of videos on YouTube.
If the stomach contains some green crap, that's good — it means the sheep/goat ate grass, and healthy animals do that. It smells fucking awful. You still have to clean the stomach of shit. You don't need the hooves, so feel free to throw them away. The wool needs to be trimmed first. It's also possible that the animal will start to defecate. That's why I have a “permanent” source of meat — mostly lamb, goat, and sometimes beef, Relatives from there send us meat.
