Imma get organic goat milk kefir from a local farm near me. I cannot go there too often, so I would like to buy in batch (like 5 bottles of 1Litres each). How long can I store them in the fridge before they go bad?

Or, can I put them in freezer, thaw it in the fridge before I consume?

Are you getting it directly out of the goat's tit? If it is stored in a tank forget about it.

To store in a fridge doesn't matter, you have to consume it within 24 hours I think.

just make water kefir

Just store them in the fridge. Unpasterized dairy doesn't really go bad, it goes sour, but it doesn't become toxic.
