How do I reduce carbohydrate intake from my diet without losing more weight?

I work out and I need caloric intake to not become anorexic cel jfl what can I substitute instead of grains and other carb sources out of my diet while keeping caloric intake?

So meats and mushrooms and dairy? I've researched on dairy being estrogenic and many concluded to that being true, are there other sources than meat?

Why mushrooms? And milk has lots of carbs, eat more meat, animal fat, cheese, butter

i thought they were beneficial in a nutrients standpoint?
but thanks for the other suggestions and also i'll avoid pork fat due to the whole toxins things in them
