I’ve started eating primarily red meat, lots of veggies, and just some small portions of rice and potatoes. My skin looks really tight

It's what you've started eating rather than what you've stopped eating that's helping you. The proteins and saturated fats in meat and the micronutrients and antioxidants in vegetables all help with skin.
