Well, it depends. It's legal to say you speak Spanish or something even if that's bullshit, but it is illegal to claim you have a degree or certification that's legally required for you to do a job, that could get you arrested, sued or both.

But in any other situation it's perfectly legal to do. Again, just don't make it obvious, or put stuff that you likely won't use in the job or the interviewer won't care about actually verifying.
