It is this way because protein takes way more energy to digest and calories are energy so if you eat like something with a lot of protein your body would have already burned calories by digesting it
Take for example 100 cals of carbs are actualy 92 cals but 100 cals of protein is 75 cals
Calories are litterly tested by destroying food with warmth and then they see how much energy is in it
