I remember putting my untanned hand next to an untanned white guy's hands and the difference was so stark

Well really, the color of your hair and eyes can also describe your skin tone, someone with light olive skin, blonde hair and blue eyes would not really be the same as someone with light olive skin, dark hair and brown eyes.

That's why your contrast makes you look exotic.

I'd say over 5.5PSL just looking at your hairline, brows and eyes.
