There's no evidence for any of what you have claimed here, denatured proteins are not an issue in digestion, they make digestion easier (studies I cited in my previous comment). They also do not create "toxic byproducts", else please cite me some research. Also, you do realize that your body is still breaking down the enzymes and proteins denatured or not? Your body has no use for whole protein structures or enzymes, it needs to break them into single amino acids (or sometimes peptides with 2 or 3 of them) for them to be usable at all.
No one is denying that gut health is important, but you're overstating the benefits of raw products, and you're understating (or directly lying about, with your own sources disagreeing with you) the risks. Risking food poisoning for some new gut bugs isn't worth it. Plus, there's some big overlap between the microbiota found in ferments and cooked food, and the one found in raw animal products, the ones that may differ aren't giving you any significant benefits in gut health (or else I'd like to read studies, because I really tried to find some but couldn't).
