homogenizing milk under pressure using UHT changes the proteins making them unusable. THAT'S ONE THING. but what im talking about is simply heating it at home enough to kill harmful bacteria... heating just enough doesnt have a drastic effect on the total nutritional value and protein quality does not change, and calcium bioavailability isnt affected. so it's safe to say "there is a slight change" but saying "nutrients/enzymes/probiotics are wasted" would be an exaggeration. some enzymes in milk dont even have a significant physiological role in human protein digestion, they are denatured in stomach acid and broken down by human enzymes in the end anyway. plus raw milk is not a controlled fermentation product like yogurt or kefir, so the risk of consuming pathogenic bacteria along with probiotics shouldnt be ignored
