not only is that unrealistic, but it ignores how most people actually cook and eat.

and let’s not pretend butter or bacon fat is chemically superior. they also oxidize and generate toxic compounds under heat.

instead, they zero in on seed oils like they’re the antichrist, when in reality, moderate consumption of properly stored, non-overheated seed oils is one of the least problematic things about the modern diet.”
