They were designed to envigor liver/kidney after high protein/fat meals of winter with their bitter cleansing powers. Ei: grapefruit, rhubarb, artichokes, dandelions, radishes and citrus.
Carminative properties of fennel, lemon, mint, nettle, mustard seed, prevent bloating/gas. Especially helpful if traditionally your raw milk consumption would increase with calving season starting.
Raw milk is encouraged since traditionally calving would occur in the spring. The milk would be luscious, with a thick amount of cream at the top. As the seasons change, the cream line becoming thinner and the milk becoming scarcer and scarcer, until all is dried up by mid-fall.
And they don't call it a spring chicken for no reason. Egg production reaches its peak in the spring -- it's also when yolks will be their brightest yellow!
Cheeses: milk of goat/sheep will taste better between March and Oct. when animals are lactating and their milk is fresh. Increasingly, artisan cheese makers are staggering breeding season: ensuring fresh milk supply throughout year to avoid the use of frozen or powdered milk.
Mushrooms like morels, porcini and oysters will start appearing. My favorite mushroom foraging season by far!.
