No real lore reason behind it outside the fact that it's a tradition mainly among jedis, there are jedis who don't use light sabers like master fay

Siths tend to be more brutal and use whatever means necessary to kill, so they will use light sabers if gets to hand to hand but will always rely on the force more

Like palpatine uses lightning to shoot from a distance, Vader and star killer throw stuff and strangle their opponents etc...

Light sabers are still powerful weapons tho, can block and slice through pretty much anything so it will always be a go to
