Both (UHMWPE) and (PEEK) are extraordinarily tough. You couldn't cut them with a knife if you tried, and I am pretty sure you would have a challenging time using an electric jigsaw to cut them too.
Note: If you got into a fight or an accident, the only things that would survive the incident would be your implants.
PEEK is "biocompatible," which has made it popular in the medical industry, but more than that, its physical attributes make it very attractive for other innovative sectors.
UHMWPE is used on hip, knee, and shoulder replacements. It can be a bit more manageable than PEEK and costs a bit less.
I prefer UHMWPE because I am not a robot, and my body will never go up to 338oF (170oC). Also, hundreds of thousands of people have UHMWPE in them and are doing just fine.
Luckily for you, if you want PEEK implants, you'll get PEEK. If you want UHMWPE implants, well, you get UHMWPE!

PLEASE, don't think that I am talking about your average UHMWPE or PEEK materials which you can probably buy at your local hardware store. I am, of course, talking about medical-grade materials which cost thousands of dollars for a small piece. Beware of doctors and companies using crap materials out there, please. You could lose your face, literally.
