What is wrong with the Mediterranean diet, for you?
Usually the best diet, in which even many vegans will agree is the Mediterranean diet, with slight variation depending on your needs
I am surprised to hear you say the best diet for you is vegetarian, health wise

Yep. Meat is generally not necessary unless you want optimal optimal physical performance.

In my eyes its just not worth the advanced glycation endproducts from the cooking and im not eating that shit raw

I eat vegetarian Mediterranean diet, since I live there is the cheapest and easiest for me. I am endurance athlete so I run very well on high carb and low fats and not a lot of protein. I still can get all my aminos, iron, omegas etc

Carbs are giga important for cardio.

What's the issue? Vegetarian is very wide. Tell me what I'm missing?
I have mainly pasta, rice, leafy greens, lentils, lots of tomato in many different forms, bit of olive oil for everything, some milk and a bit of cheese. Like where I was born it's very typical to just make rice with vegetables on a big pan.

I can do road cycling sessions of 4-5 hours where I can spend around 3000 cal and kept consistent recovery over long blocks of training, I'm pretty sure my diet works.

I eat meat twice a week

Cooked meat has advanced glycation end products which contribute skin loss of skin elasticity as you age.

You could eat raw, but thats nasty
