Vitamin C Effects on Facial Redness

I feel like every time I eat lots of potatoes the next day my skin looks crazy clear (less redness), and i know that the high potassium content is a factor, but I do think the vitamin C content is the main contributor. Maybe taking a vitamin C supplement could replicate this. Looking for insight or anyone elses experience.
