There is bone shaving used for reducing projection bone. Popular in Asia where they reduce jaw and chin size in females for more juvenile and neotony look. In the west were bone mass is increased its less common.

Personally i wouldn't reduce your chin. If you are thinking about it let a user here photoshop your chin height to see if you like that more.
