eating around 500 cals one day, then around 2000 the next?

Consistent calorie deficit. I would say try to be in a 1000 calorie deficit per day, maybe 1500 if you want to be really aggressive. Also, 500 calories a day sounds like a recipe for muscle loss.
 
calorie deficit obviously but do not eat 500 fucking calories a day. especially if your in puberty your just fucking your development
