By my understanding antinutrients balances pH, reduces inflammation and helps your body deal with an excess of vitamins as too much vitamins makes you malnourished due to the vitamins in your body tissues binding to the surplus vitamins effectively stealing your nutrients out of your body.
But i'm no expert

Simply explained they're chemicals found is certain plants that inhibit the absorption of certain vitamins, minerals and elements.

It's not a meme at all. I used to have IBD/depression/psoriasis and all of them have resolved after removing plants from my diet for a few months.

Plants dont want to be eaten. Seeing as they cant run away they produce chemical defenses designed to fuck with pests/fungus, inhibit absorption of minerals by the eater, inhibit enzymes in the eater (ex. protease inhibitors in seeds).

Plants contain lectins (gluten being the most well known) which fuck up your digestion, cause intestinal permeability, may be able to travel up the vagus nerve into the brain.

Plants contain oxalate which binds to minerals and accumulates in the tissues and can cause all sorts of problems, disrupting manifold processes in the body.

There are also thousands of compounds in plants whose effects on humans havent been studied.

Most of our ancestors would have eaten a very limited variety of plants, and then only seasonally, prepared using traditional methods designed to neutralize the anti-nutrient content (e.x. sourdough bread which is fermented to deactivate the lectins). Most of the fruits and vegetables we eat today didn't exist or would have been unrecognizable a few hundred years ago because of hybridization, selective breeding, etc., and wouldnt have been available to us in the variety modern humans take for granted because of the lack of cheap transportation/refrigeration.
