Butter is super good and butter adjacent things such as ghee they’re both good for cooking but use beef tallow instead of oil for stuff that requires a huge heat such as making French fries because it has a higher smoking point than butter. Animal fats overall are amazingWhich is healthiest fat to cook in? Avacado oil? Olive oil? Lard? Butter? Discuss

Beef tallow doesn’t really impact flavor and grass fed butter is almost always used on steaks to make the flavor better plus if you’re cooking right and seasoning with garlic you won’t notice the gamy flavor if the animal fat has any at allIs there a neutral animal fat to cook in? Yes. You need fats with a high smoke point so it doesn't burn during searing, roasting, frying. And medium heat for sauteing and something with a nice flavour for finishing salads like olive oil in saladsThing you guys are forgetting is the smoke points of each individual fat, not one thing will work to cook every meal
