broGreat question OP.
Both are extreme diet models and have their own unique benefits.
The biggest benefit you get with carnivore is the foundation of your hormones.
Cholesterol -> Other steps -> Testosterone
Also it is pretty much impossible to overeat on carnivore, meaning you would most likely be a low bf% after some months of doing that strict diet model.
You also get some downsides obviously, humans are omnivores and are supposed to eat a balanced diet.
It may seem like jewish propaganda but it is the truth.
Some downsides include anything related with cardiovascular health like hypercholesterolemia. Obviously also not getting your micronutrients in obviously.
The benefit with being vegan is that you basically create a primarely antioxidant environment for your body, also you'll drop in bf% just as with carnivore.
The biggest downside is that you won't basically be able to get your proteins in. So you wouldn't have a "jacked lean" physique, but rather a skinny physique.
There are a ton of up and downsides for both, like I mentioned in the beginning extreme diet models shouldn't be done except for short time frames or with a specific reason.
