In any case, there are a number of reasons asking out the older whale would make me more nervous than telling a 30 year old Latina she has beautiful eyes.

For one, you're not forcing the 30 year old to assess your worthiness. You're just complimenting her (a compliment isn't an ask out)

With asking out the older whale, on the other hand, you're forcing her to assess your worthiness (And can you really say you wouldn't be embarrassed to be deemed inadequate by a mediocre old whale?)

For me, the intimidation factor depends on what I'm trying to get from her.
