I think because when u turn your head you are stretching the skin underneath and makes your face look more defined

There is more than one possibility so you can check for yourself and see if you have any of these(and of course as you turn sideways the cheeckbones will shade the depth and 3-dimensionality of the face and create a flat image)
-Poor Maxillary developement
-Lack posterior facial depth
-Lack of Anterior Facial Depth
-İnfraOrbital recession(poor under eye support)

one reason is because of different perceptions and angles

a 3 inch pencil will look longer at a 70 degree angle, and smaller at a 90 degree angle. it's why a lot of people take 3/4th selfies and rarely upload side profile pics
