i ate too much unripe fruits and thought it was healthy. the acid in unripe fruits is really high and it fucks up your enamel.

Most of these "problems" are simply addressed with cheap supplementation (B12, D3, etc.). Some of the other "deficiencies" are simply due to test subjects not eating a complete, plant-based diet (which is easily possible). Carnitine is synthesized and is not considered an essential, consumable amino acid. Iodine deficiency is literally addressable by eating salt (or a supplement). The bioavailability/absorption "issues" are only issues depending on the relative consumptions of the food sources.
