It's mainly because of farming practices. The hunter gatherers and foragers that predated them were much taller than these neolithic farmers mentioned in OP. They were literally 6'1 on average. Eating soft food and farming is what decrease it.

There are three main components that all South Asians have, namely Farmer, Steppe and AASI. Dravidians have most AASI, then some Farmer and little to no Steppe.
