But it's fun to learn about, because there's near infinite complexity to learn about. Like I have lots of theories, that may or may not turn out to be right.

I never really went that deep into nutrition I just eat meat, eggs, bread and raw milk.I’ve never really eaten a vegtable by itself but I feel pretty good everyday so I guess it’s working.

I think you need to look at the studies to get the full picture, but also history, genetics, different theories, fossil records, and everything really because it's all connected and you need to know all of it to make the best theories.

It is, everybody is unique, some foods affect other people differently, I don't think there should be a lot of stress on what you consume considering it's non processed

I disagree. You have to look at what they did, and the results they got, but generally ignore the theories for those results. It's still all useful data points.

Take for example glycemic index studies. You know how much different types of food on their own will raise your blood sugar.

But when you combine foods you can make reasonable guesses about how quick they would raise your blood sugar, based on what order you're eating them, and if you blended them.

Basically the studies give some idea of the physics.

Or the study on the carnivore eskimo from 400 years ago that showed she had arterial plaque and heart disease.

Or studies breaking down different foods, showing what size anti-oxidants they have, or the senolytics they have, or other useful properties and how those might effect a human. Or how different food preparation changes food.

Or the eating and life style habits of different long lived populations. None of these studies alone tell us much, because each study has too many unknowns, but considering all of them together you can start to see a clearer picture of everything.

2. But we must eat the same foods each week, because our bodies get very good at using different foods. So if we're eating the same foods week after week (and those are mostly non-processed), we'll be very good at using those foods to repair ourselves.

3. We focus on diet because it's easy to conceptualize as helping us, but a much bigger factor on longevity and health is keeping low stress and getting quality sleep. This is the biggest factor, because it's how good our repair state is. (assuming we're eating some variety of whole foods).

I think that could definitely have something to do with the kind of people they are

Sticking to a schedule and not making changes lets your body adapt and is less stressful

I’m genuinely trying to figure this out, unless I’m going mad, I remember that yeah fibre is indigestible but it still has a role in slowing carb absorption and stabilising blood sugar. Plus fruits and veg aren’t gonna lead to a carb surplus unless you’re blending fucking bananas. How is fibre toxic???
