  • Simple sugars > starches in regards to metabolic increase, sugar regulation, stress inhibition, and overall energy production
  • Starches feed bacteria that produce endotoxins and serotonin
  • Starch particles scratch the intestine, and as a response, the intestines release serotonin.
  • Starch particles can end up in the bloodstream and can block blood vessels.
  • We don't crave starch itself, but the sugar and salt we usually add to it.
  • Refined white sugar is better than starch but depletes the B vitamins and minerals since it's very refined.
  • Simple sugar produces more CO2 compared to starch.
