They're evolved for rice farming which means they have to survive in a wet hot and disease ridden climate while working. This results in reduced skeletons to conserve energy.

Rice farming has very high productivity but it's by far the most energy intensive form of resource gathering. IE it results in a highly specialized phenotype to do it effectively.

Chinese and Japanese also farm rice but their climates are much colder, so there is another selective pressure for oversized face bones and stockier skeleton.
